YUM!: Brownie Butter Cake

Make this Brownie Butter cake and take a bite out of this decadent delicacy!

Brownie Butter Cake Recipe
Makes 1 loaf | Prep Time: 30 mins | Bake Time: 55 mins



140g (5oz) dark chocolate (broken into pieces)
50g (¼ cup) unsalted butter
50g (¼ cup) brown sugar
1 Egg
35g (¼ cup) all-purpose flour

Butter cake:

120g (½ cup) unsalted butter
100g (½ cup) sugar (I reduced by 1 Tbsp)
2 Eggs
120g (1 cup) all-purpose flour
2g (¼ tsp) baking powder
50ml (3 ½ Tbsp) fresh milk


  1. First, grease and line a 10cm x 20cm (4×8-in) loaf pan with aluminium foil and preheat oven to 180C/350F.
  2. To make the brownie, melt chocolate and butter over low heat. Remove and leave it to cool slightly. Stir in brown sugar until blended.
  3. Add in egg, mix well. Fold in flour, mix until well combined. Pour batter into prepared pan. Bake in preheated oven for 15 minutes. Remove.
  4. To make butter cake, beat butter with sugar until creamy. Add in eggs, one at a time, beating well after each addition.
  5. Fold in sifted flour and baking powder, alternately add in fresh milk, mix to form batter.
  6. Spread the butter cake batter over brownie, bake in oven at 160C/320F for 25-30 minutes or until cooked. Insert a cake tester in the middle to check doneness.
  7. Lastly, enjoy!

Cinnamon Cream Cheese Pastry Puffs

So while I was browsing pinterest , I came up this delicious treat and I thought I would share it with all you. Since I will be going home at the end of the month, I will be able to make these and try it out, I am super duper excited!

Cinnamon Cream Cheese Pastry Puffs
Prep time: 15 mins
Cook time: 12 mins
Total time: 27 mins
Serves: 10 pastries

Ingredients needed:
  • 1 8oz block cream cheese, softened
  • ½ cup powdered sugar
  • ½ teaspoon cinnamon
  • 1 12 oz tube Grands!®Jr. Golden Layers Butter Tastin’ Biscuits
  • 1 egg (for egg wash)
  • Coarse sugar for sprinkling on top


  1. Preheat the oven to 375 degrees.
  2. In a small bowl, mix your softened cream cheese, powdered sugar and cinnamon until creamy. Set aside.
  3. On a non-sticking baking sheet, press each biscuit out into a rectangle form, about 4 inches by 3 inches, being careful not to break a hole in the dough. Spoon a heaping tablespoon of the filling into the center of each biscuit. Fold the long sides in, overlapping the edges, then fold the ends under, pressing the seams just very gently to help them seal. Turn the pastries over, placing them seam-side down.
  4. Whisk an egg in a small bowl, then brush the tops of the pastries with egg wash. Sprinkle the tops with coarse sugar.
  5. Bake at 375 degrees for 12 minutes. Serve immediately, or allow them to cool and refrigerate.
  6. Last step is to eat and enjoy!

Delicious Eats: Chicken and Caramelized Onion Quesadilla

Found this recipe while browsing the Internet and when I saw it, it made me eager to eat it. Now, im posting this recipe so all of you can make and taste this yummy quesadilla and share this with others!

Chicken Quesadilla
So easy to make, all you need is just some chicken breasts (a rotisserie chicken would be even better or if you have some leftover grilled chicken from a BBQ, that works too), caramelized onions, large piece of pepper jack cheese,  Flour tortillas, fresh tomatoes, an avocado, sour cream and some fresh cilantro. With just those ingredients, this meal will be on the table in no time!

Chicken And Caramelized Onion Quesadilla

This recipe makes one quesadilla, adjust recipe accordingly.

  • 2 flour tortillas
  • oil to brush the tortillas
  • 1/4 to 1/2 c. shredded pepper jack cheese (or any easy to melt cheese)
  • 1/4 to 1/2 c. caramelized onions (2 onions, sliced and cooked about 20 min.)
  • 1/4 to 1/2 c. cooked and shredded chicken
  • 1 Tbsp. olive oil
  • 1/2 tsp. cumin
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. chipotle chili powder
  • 1/8 tsp. cayenne pepper
  • salt and pepper to taste
  • 1/4 c. sautéed red bell peppers
  • 1 sliced and sautéed jalapeño (or sliced pickled jalapeños) or to taste
  • 1 Tbsp. chopped cilantro
  • lime wedges to garnish


  1. Heat 1 Tbsp. olive oil in pan and add chicken, cumin, paprika, chili powder, cayenne, salt and pepper.
  2. Mix and cook until just heated through.
  3. Brush one side of the tortilla with oil and place in a non stick pan.
  4. Sprinkle with 1/2 of the cheese, then add the onions, chicken, bell peppers, jalapeños, the last 1/2 of the cheese, and the cilantro.
  5. Top with the second tortilla and brush with oil.
  6. Cook on medium heat until golden, turn and cook until golden on the other side. Remove from the pan and let rest a couple of minutes before slicing.
  7. Garnish with lime wedges.
  8. Lastly, Enjoy!

Oreo Cheesecake Cookies aka The Most Amazing Cookies Yet!

So I was in the mood for cheesecake this afternoon, so while I was looking at cheesecake recipes on the Internet, I found this little treat on cannellavita.com. There is nothing that can go wrong when you mix two of the world’s greatest things, cookies and cheesecake, and combine it to make the most delicious delicacy in the planet! Do I have your attention yet? Good! That just means that its time to move on to the recipe so you can eat these delicious bites of heaven!

Oreo Cookie Layout

The Ingredients
½ cup unsalted butter, at room temperature
3 ounces cream cheese, at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup mini chocolate chips
1 cup Oreo cookie crumbs

1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.
2. In a mixing bowl, cream together the butter and cream cheese on medium speed until smooth and well-combined.
3. Add the sugar and vanilla extract and mix until the ingredients are well-combined. Add the flour and mix on low until the flour is incorporated. Stir in the mini chocolate chips with a rubber spatula.
4. Place the Oreo cookie crumbs in a small bowl. Scoop the cookies into about 1½ to 2″ balls and then roll in the cookie crumbs. Place the cookie balls on the baking sheet. Bake for 12 to 15 minutes, or until the edges are golden and the tops are slightly puffed.
5. Cool on the pan for 2 minutes before transferring to a wire rack to cool completely. Store in an airtight container.
